Groundhog pudding is a sweet, silly snack you can make in minutes. You’ll build “dirt” pudding, add “grass,” and pop in a cookie groundhog with big googly eyes. It’s part dessert, part pretend play and perfect for groundhog day!
If you're using instant pudding, make the pudding according to the package instructions and let it chill in the fridge until set. Once set, add 2-3 inches of pudding in the bottom of a cup or glass.
Add a few drops of green food coloring to shredded coconut flakes. Stir well until all the coconut is the same green.
Add your candy eyes to the back of the Biscoff cookie using the icing as glue. If you don't have have candy eyes, you can use a round white sprinkle or other white candy and add a black dot using a food-safe, edible marker.
Finish your groundhog cookie by adding a sprinkle nose and teeth. We cut the hook off some white candy cane sprinkles we had to make the teeth. If you don't have white sprinkles, you could try cutting up marshmallows, apples, or pears, or making them out of icing.
Sprinkle your green coconut on top of your pudding dirt, then dunk your cookie into the mud.
